2019 was a warm clear and dry vintage. After a mild winter, budburst came a touch early. Flowering in sauvignon blanc in late spring occurred during a short window of fine weather. As a result the fruit grew and matured evenly.
Made from a small block of sauvignon blanc next to the dam on the Napoleone Vineyard (Coldstream), we press the juice to old hogsheads for a warm, high solids fermentation.
The wine remains in oak for 3 months, stirred monthly. Racked out in mid-May, and bottled in late May 2019.
No finings, minimally filtered, vegan friendly. We call this smashability with interest.
